Pumpkin Ravioli - Marina T.

Filling:
*3/4 cup fresh pumpkin puree or organic canned pumpkin
*1 cup store-bought or homemade ricotta cheese
*1 egg yolk, preferably organic and free-range
*1/4 cup parmesan cheese
*pinch of sea salt
*pinch of nutmeg

dough:
*3 cups sifted organic all purpose flour
*4 eggs
*1 tsp. sea salt
*1 tsp. olive oil

Veal Roast- by Me

Can't get any easier than this:

1 Veal roast any size for a family of 5 I use 2.5 pounds
paprika, salt, pepper, garlic powder, cumin powder

Season to taste place in preheated  425 degree oven covered for 1 1/2 hours and let it melt in your mouth......... delicious.

You can also make sandwiches for work with it!!

Fancy Chicken w/ Basmati Rice -Nevelle

Here's one of my favourites too (personal recipe) VERY EASY!

Use a whole cut up chicken for this.
Add a tin of coconut milk/cream to a mixing bowl. Then 2-3 Tablespoons of peanut butter. Pour some soya sauce freehand (I don't know from measures really). Add lots of honey and mix them all together well. Pour it over the chicken and that's pretty much it. It's delicious! About 5-10 mins before taking it out the oven cover the chicken with fresh coriander. Obviously don't do this when making for Shabbos. Do initially with the chicken. Also put whole or half onions amongst the chicken pieces. Works really well. Serve this dish with Basmati rice.

Scalloped Potatoes Recipe- Ingrid

Preheat oven to 350F. INGREDIENTS: 6 tablespoons of margarine, 1/2 cup of flour, 2 large onions chopped, 1/2 cup of mayonnaise (we use Hellman's Olive Oi Mayo), 1/2 teaspoon salt, 3 1/2 cup of chicken stock (she uses parve Chicken Bouillon dissolved in hot water), 9-10 large Idaho potatoes, peeled and thinly sliced, freshly ground pepper, paprika, (she adds also sweet red paprika and a few twigs of fresh Rosemary). INSTRUCTIONS: In a large pot, melt the margarine and slowly add the flour, mixing all the time. Add the onions (will come out tasting a bit like sauteed), mayonnaise, salt and the chicken broth, dash of nutmeg and the rosemary twigs. Stir until smooth, and cook until it thickens (take out the twigs, the rosemary leaves will remain in the sauce). Spread a layer of the sauce in a shallow dish (or 9x13) sprayed with Pam Olive Oil Spray, then layer alternately the thinly sliced potatoes and the sauce (there will be a total of 3 layers of sauce and 2 of potatoes). Sprinkle top w/ Black Pepper and Paprika. Bake uncovered for about 1:15 to 1:30 hour (until golden brown). ADVISE: make 2 trays!!! You can always leave it in the fridge to warm up another time... but if our experience is a telltale... there will be none left!!!

Spinich or Broccoli Kugel-- Donny

‎8 oz tri-color pasta (cooked), 8 oz coffee rich, 1 package onion soup mix (preferably Goodman) , 1/4 stick margarine, 10 oz chopped broccoli (cooked). Mix all, bake on 350 15 covered, 15 minutes uncovered. We all love it! Can also be made with spinach...

Easy Sweet Noodle casserole --- Donny

Easy sweet noodle kugel: 1/2 bag medium noodles (cooked), 3 eggs, 1/2 cup coffee rich, 1 tsp vanilla, 1/2 cup sugar, 1-1/2 tbs lemon juice, 1/4 stick margarine. Combine all bake until a bit brown on top.
My daughter gave this the ULTIMATE compliment. She said it is better than Mommy's....who is a gourmet cook!

Apricot Chicken-- Ruthie

I make a delicious Apricot Chicken (recipe taken from the Spice and Spirit cookbook): 3 Tbsp apricot jam, 3 Tbsp lemon juice, 3 Tbsp tomato ketchup, 3 Tbsp mayonnaise and heaped Tbsp onion soup mix. Heat the ingredients slowly in a pan, stirring all the time until bubbling. Then pour over the chicken. (I use chicken cut into 8 pieces.) Bake uncovered at 180 degrees (350 F) for 1 1/4 hour. Simple yet scrumptious!!

Lamb Cholent - Neville

You want to make a lot so don't be shy with the ingredients. Use 2 packets of baby potatoes as your bottom layer in your crock pot. Unpeeled! Put whole garlic cloves in between the potatoes. Don't be shy. Drizzle the potatoes with olive oil and crush a little sea salt and bl pepper over them. Put whole peeled onions in also. Baby ones better. Lay flat on the veggie bed a decent shoulder of lamb. Cut holes into it and stuff garlic cloves in. Drizzle also with olive oil and do the same with the sea salt and bl pepper. Lay a lot of fresh rosemary on top of the lamb. Turn the crock pot onto low and leave for anything from 8-24 hours! It will make its own juice and the meat will lit fall off the bone! That's it! Simple recipe but when you smell the house you'll know what you in for. Let me know how it goes.

Sweet Cocktail Meatballs _ Tamara

Sweet Cocktail Meatballs: 
1 package ground chopped meat. 
1 can cranberry sauce, 
1 jar marinara sauce-boil

combine  1 package ground meat with cranberry sauce , form into small balls and boil in Marinara Sauce.

Chicken Piccata - Ingrid


Chicken Piccata: 6 to 8 chicken breast halves, boneless, no skin
1/2 cup flour
1 1/2 teaspoons salt
1/4 teaspoon freshly ground pepper
1/2 teaspoon paprika, or to taste
3 tablespoons butter
2 tablespoons olive oil
1/4 cup chicken broth or water
3 tablespoons fresh lemon juice
6 to 8 thin slices of lemon
3 tablespoons capers (optional)
Preparation:

Put chicken breasts between 2 sheets of waxed paper or plastic wrap; pound to flatten to about 1/4-inch. In a shallow bowl, combine flour, salt, pepper and paprika; dredge chicken breasts to coat well.
Heat butter and olive oil in a large skillet. Saute chicken breasts in batches, about 3 minutes on each side.
Drain off all but 2 tablespoons of fat. Stir in chicken broth, scraping to loosen browned bits. Add lemon juice and heat through. Return chicken to the skillet with the lemon slices; heat until sauce thickens. Add capers, if using. Serve with your favorite pasta and a green vegetable.
Chicken Piccata recipe serves 6 to 8.

Fish Balls -Tamara

Fish balls: Take onion saute, add fresh garlic-continue sauteing. 1 Jar tomato sauce, 1 can tomato sauce, one water filled can and jar. (about 3cups water). Take 1/2 way defrosted roll of gefilta fish, form into balls-drop in boiled sauce. add A LOT OF GARLIC powder . Sprinkle with pepper and a little oregano (if you wish). cook for about 45mins to hour. oh i also like adding in chopped carrots or baby carrots and squash pieces (about 3).

Squash Soup --Tamara G.

Squash Soup: 
what you will need:
3 large/4small zuchinni squash-peeled and cut up
one medium onion
oil for saute and salt and pepper and chicken soup mix 
Direction:
Take peeled and chopped onion, saute till lightly brown, than add zuchinni-continue sauteing. add salt and pepper to taste. 1 Tbs chicken soup mix-stir, add 4cups of water-let cook for about 1/2hr-45 mins.
Than you can blend with hand blender if you wish.

Basic Chocolate cake recipe submitted by Ruth

this is a basic choc recipe: 
very easy. 
first mix: 
2 eggs, 
2 Cups sugar, 
1 Cup oil, 
1 Cup  parve milk, 
1 teaspoon vanilla. 
then add to the liquid: 
2 Cups  flour, 
1 Cups cocoa, 
1 teaspoon baking powder, 
1 teaspoon baking soda. 
bake 350 for 1 hr.
I use a hand mixer (perfect).

Today is my first time blogging! I am very excited.  I chose to make a Kosher Kitchen Korner so that everyone can share their recipes and we can share the yummy foods that we love most!  Hope you all enjoy....
